So when you use some automatic software to schedule out your emails, make sure you check back to see if it actually sent anything... Today, I wanted to talk to you about one of my favorite topics in deer hunting, processing. I think it is crazy that most people think of processing as something you do after you have a deer in a cooler and it needs to be cut into steaks. The truth is, processing starts before you ever nock an arrow or close your bolt. I have also been a bit trigger-happy this year and have already shot five deer, so I have had plenty of practice processing this year. Today's featured article walks you through that process and tells you everything you need to know to make your deer meat taste as good as possible.

There are quite a few different ways you can age deer meat, but my method is SUPER SIMPLE.
I use a regular cooler with a drain plug. The drain plug is very important. After you skin your deer and cut it into quarters, lay them down in a cooler with ice on the bottom, top, and inbetween your quarters. Then you want to put a block under the side of the cooler without the drain plug and open the drain plug.
This is going to let gravity drain your cooler constantly. You have to let that sitting water out, or else the meat will soak in it, which promotes bad bacterial growth and leads to a gamey taste. Let it sit like that and age for seven days; add more ice if needed.
If you don't have a cooler, or yours doesn't have a drain plug, you can get this Coleman cooler from Sportsman's Warehouse (the same one I use). It is $130, which is cheap as far as coolers go, and I have had some awesome Coleman coolers that outperform $400 coolers all day long.
I am actually aging some deer right now and ran outside to snap this picture while I was putting this email together. Notice the incline, and you will have to take my word for it that I have the drain plug open on the wheel side. So far, no complaints out of this cooler! I have just had to add ice a couple times, but it is unusually warm here in north Georgia.

Many of you have probably heard of the buck killed out of Kentucky/Indiana recently. There has been a bit of controversy around it.
